One More Apple Post- Eve's Pudding

It has been a week full of wonderful apple recipes around our house. I could cook with apples all of the time, they smell wonderful while they are cooking, and they taste great. We have had a lot of fall rain and gray skies this week, and I have been enjoying the cooler weather and the opportunity to bake and cook all week long.

This is what the sky has been like a lot lately- luckily the Sun does peek out from time to time. :)



So I wanted to do one more Apple post for the week, before I it becomes all pumpkins and Halloween around here. Tonight I made one of my most favorite apple desserts using up the last of the local apples I bought at the apple festival this week. I used them to make Eve's Pudding - I found this recipe about 17 years ago in an England Travel Magazine- as soon as I tried it, I knew it would be a favorite. Not to be confused with the American definition of pudding, this is a British classic dessert, the apples cook up deliciously under a very tasty sponge type cake.

Eve's Pudding

5-6 Apples peeled, cored, & sliced
1/4 c. sugar
Cinnamon to taste (I used a bit more than a Tablespoon)
1/4 teaspoon Allspice
3/4 cup sugar
6 Tablespoons Butter
1 Extra Large Egg
1 teaspoon Vanilla extract
1 1/4 cup flour
2 teaspoons Baking Powder
4 Tablespoons Milk

Preheat oven to 350 F.

Put apple slices in a glass deep dish pie pan, toss with 1/4 cup sugar, cinnamon and allspice until evenly coated. Set Aside.

In a bowl, cream together butter and 3/4 cup sugar, then beat in egg and vanilla. Then add half the flour along with the baking powder, when the mixture is blended, mix in the rest of the flour and the milk. The mixture should be soft and spreadable, not runny. Spread over the top of the apples in the Pie dish.



Bake for 30-40 minutes until top is Golden brown & springs back when touched. ( I inserted a knife in the center to make sure it came out clean)





Cool and serve.

The sponge cake is wonderful and the crust is every so slightly sugary crisp, it goes perfect with the cinnamon apples. I hope everyone gives this recipe a try, it is one of my top apple desserts!

The Apple Cake by Nienke van Hichtum and illustrated by Marjan van Zeyl .



I bought this book a few years ago and I just love the message in this story. The story is about a nice old woman who wants to bake an apple cake, but has no apples, however, she does have a basket of plums. So she sets of to market with her plums to see what she can do. She meets and trades with various people along the way, always positive about what she trades for even when it is not apples. She is so kind to people and has such a positive attitude, showing both gratitude and a giving heart. I will not give away the end of the story, but I will say that this book is wonderful for teaching the positive character traits that the women in this story shows. Perfect for a Harvest lesson in thankfulness. I absolutely love this story, and the illustrations are beautiful. Perfect book for the season!

  1. What a neat dessert! I love the name. The next time I make out an order to Amazon, I'll have to get the book you suggested. Even though I'm an old lady, I still love children's books. That one sounds like a good one!

  2. Jane~ I love children's books even though my children are both teens. I still purchase them for our home,and love reading them and enjoying the illustrations. Children's Books are great- there are so many talented Children's writers and amazing illustrators!

    Love the book suggestion. We pick apples like crazy around here in the fall. No sooner did I get a whopping 47 pints put up I turned around and picked another 15gallons...this time I think I'll can for my friends who could use some good home-cooked goodness in their pantry. All the best.
